This is the first boning knife I've owned. I am amazed at the difference it makes having the right tool for the job. This knife is very sharp and slices through poultry and beef with great ease. The handle is large enough to obtain a comfortable grip and the slightly rough texture gives it a non-slip quality even with cold, sloppy hands from grabbing chicken parts. The blade isn't as flexible as another knife I tried (at a friend's) but I like that as it has some firmness to it to help go through some gristle when separating ribs and with thicker, firmer meats.

Although cutlery steel is naturally sanitary, materials and construction details of the handle minimize crevices what would offer hospitality to bacteria.
