The balance is great and the knife functions as an extension of the hand. Although not a "guilty pleasure" to use, like some of my much more expensive knives, it nevertheless is a pleasure to use as an everyday knife. It is a nice affordable option for gifting to friends who don't have a knife you feel comfortable using. Helping out in other kitchens becomes much more enjoyable. I suppose it is a bit of a guilty pleasure, in that regard, so buy one for your close friends who don't have good knives and keep one for yourself.
Customer Review: This knife turned me into a chef Summary: 5 StarsOK, just buying this knife didn't turn me into a chef, but after years of using kitchen knives and not really thinking much about them I purchased this 8" chef's knife and it completely revolutionized cooking for me.
I understand that this knife may not be quite as good as some of the knives costing many times more, but compared to the various department store knives I had been using this thing is simply incredible. Razor sharp, holds an edge well and feel great in my hand. Slicing and dicing has become nearly effortless. Using this knife is something I actually look forward to.
I have subsequently purchased several of the Victorinox knives and they are all good, better than anything I have used before.
This is a line of kitchen knives I would recommend to anyone.
As an aside, since these knives don't come with a block I purchased a magnet strip to hang knives from. I love this way of storing/displaying knives. Very convenient. Do yourself a favor and purchase a knife steel if you don't already own one and learn to use it. You will never have the problem of a dull knife again. Fast, easy and keeps the blades in out of the box sharpness for a very long time.

The knife is attractively designed, razor sharp, and well-balanced. The construction is sturdy, giving you confidence that it will last for years. I take great care of this knife, and it still cuts like it is out of the packaging.
The knife's edge has great all-around performance. The blade is smooth, sharp, and cuts a nice line with a heavy balance. The tip is the only thing that I believe could be a little sharper, as I've had a little difficulty piercing some of the squashes that I use frequently.
The handle is absolutely fantastic. It is larger, so it fits my hand perfectly. The grip has a nice texture as well, so you can handle it when your hands are wet. The balance is fantastic and allows for real control and precision. I love this in a knife.
The only complaints I have are the large markings on the blade, the tip, and how often food gets stuck on the surface. To combat this, I apply a tiny bit of oil onto the surface so that I don't have to keep pulling off the pieces to maintain a good cut.
Overall, you won't find a better value in a knife.
Customer Review: Long time dark horse Summary: 5 StarsMy first exposure to Forschner/Victorinox was in the restaurant business. I was using as serrated bread knife to cut limes and I couldn't believe how well it cut and how comfortable it felt in my hand. I'd always loved good cutlery but couldn't afford Henckels or Wusthoffs so I decided to check out the Forschners. I found them to be unbelievably affordable and that they were the preferred brand of butchers/meat cutters; they had a reputation as a "working mans' knife." This was enough for me. I started buying and soon had a full set including a meat cleaver and a Chinese cleaver (which I had to order). The chef knives DO NOT have the 'heel' at the base of the blade as the upper end brands do. The absence of this heel allows a rolling/rocking motion while cutting, which I prefer. Being popular among meat-cutters Forschner offers some uncommon shapes in blades such as the "lamb skinner," so variety is there if you want it. I have no qualms about leaving one of these knives over-night in dishwater; it has no effect on the Fibrox handles. The steel is very difficult to stain or discolor because of its high Chromium content; Chromium is what makes stainless steel stainless and has an inherently negative effect on edge-holding ability, which all knife makers using stainless steel have to deal with. Despite this these knives hold a decent edge; I have no complaints. I've had my set for nearly 20 years now with no glitches or regrets. If you're into function without fashion and price IS an object, You should have a look at these.
