I am now a big fan of Victorinox/Forshner knives. I've used Wusthof knives and decided to take a chance on Victorinox because it did well in reviews compared to more expensive brands. I have the 6", 8" and paring Victorinox knives and they are excellent - sharp, easy to grip because of their Fibrox (rubber-plastic-like?) handles, and light so my hands don't tire as quickly. Feels very natural and cuts well, even though it is lighter than Wusthof. A few great purchases.

Description of Victorinox 6-Inch Utility Knife with Blade Protector

In 1884 Master Cutler Karl Elsner started his cutlery factory in Ibach, Switzerland and in 1897 he crafted the Victorinox Original Swiss Army Knife. Since that time the Elsner family has continued to craft tools of percision, durability and quality. Victorinox is one of the largest producers of cutlery in the world. Victorinox cutlery has been distributed in the United States since 1884 to culinary professionals under the brand name R.H. Forschner. Each blade is stamped from a single sheet of metal. The blade is then hardened, tempered, ground, polished, etched and finished.
This six-inch utility knife from Victorinox is ideal for making sandwiches, preparing salads, and all kinds of other daily tasks. The blade measures 1-1/4 inches in width near the handle, which facilitates scooping up chopped items and placing them in a pan or bowl. Stamped rather than forged to keep the price reasonable, the high-carbon, stainless steel blade is ground to a razor-sharp edge that can be re-sharpened repeatedly. The molded Fibrox handle provides a sure grip, has no grooves or rivets to harbor bacteria, and is dishwasher-safe. All in all, this is a lightweight and versatile knife.

Included with this knife is a plastic BladeSafe protector that snaps securely in place over the blade, protecting not only the knife blade from nicks when it's stored in a drawer but hands that reach in. The clear plastic case is excellent also for transporting the knife on a picnic or camping trip. Started in 1884 in Switzerland, Victorinox is perhaps best known as the manufacturer of the Original Swiss Army Knife. Today Victorinox by R.H.
