My favorite knife for the last 20-30 years broke recently and after trying different unsatisfactory knives I went to my best friend for advice. She is a chef and so is her husband. She immediately said buy a Victorinox. I bought the special of three of their knives, the 6" and 8"Chef's knives, and the paring knife. I LOVE THEM!!!!

I bought 4 Forschner knives for my mother so I could have some workable cutlery when I cooked for her. My own knives are Wusthof Classic and I like their slim handles and blade heavy balance. The 8" Forschner cook's knife felt clumsy at first with a light blade and fat handle, but turned out to be a very serviceable bargain. The 5" mini-chef is a very good utility knife. The 6" chef knife doesn't have enough blade/handle clearance for chopping and is too long and clumsy to be a useful utility knife.

I have purchased several Victorinox Fibrox knives so far and the quality has always been excellent. In addition, to purchasing this 6" chef's knife I also purchased the 8 piece knife set with the block and a 7" santoku. I found this knife to have an extremely sharp blade. The edge has held up well so far, after several weeks of use. The knife is quite light, especially when compared to the 8" chef's knife and the blade is not as deep. The only reason that I did not give this blade 5 stars is that the handle is smaller and not as sturdy as the handles on the knives that were part of the knife set.

This knife does a fantastic job for every day kitchen tasks. The first thing I did when I got it was slice a really ripe tomato. This is something that used to be so frustrating for me with my old cheap knives as they would do a decent job for the first half, but as the tomato lost structural support, it would collapse and get all mushy. And this would make me sad (it ruined my first two marriages). But this new knife is fantastic! All the way through, I was thin slicing this tomato like a pro. I had paper thin tomato slices! And that made me happy. If you want an inexpensive but super quality knife that will slice tomatoes like a sushi chef, buy this. If you want your marriage to fall apart and your career to hit a dead-end, buy a cheap knife. (I'm kidding about the marriage part, but so serious about the career thing. I got promoted to Vice President after buying this knife.)
