What an awesome knife. I've cooked for many years both professionally and in my own home and this is a great knife. Light, easy to handle and holds an edge as well as professional knives I've used. The blade is a bit thinner that the knives you see in restaurants but that just gives a lighter feel. The textured handle helps you keep a grip even with wet hands. I use this knife everyday. The large size makes it ideal for butterflying meat and making cutlets as well as chopping. I would recommend this knife to anyone. If you are just starting out cooking and can't afford an array of expensive knives this is the one you should buy. Very useful

Cooks Illustrated rated this knife the best in their comparison of chef's knives. I bought one for myself a year ago and liked it so much I got one for a friend last Christmas. Victorinox seems to have won all their tests. I would really like a Robert Kramer Damascus steel knife for the sheer beauty of the workmanship but at $100 an inch, it's too steep for my blood. I took myself off his 3 year waiting list. Darn it!

We had a whole set of these knives at home already. I bought 2 more for some cooking workshops that I host (after totally wasting my money on cheaper ones that wouldn't cut worth a darn). The knives work fabulously, especially for being relatively inexpensive.

Originally I wanted the Shun Classic series 10" chefs knife, but at 160 dollars or so, I couldn't really afford it yet. I came across this on Amazon, and decided it would be worth a shot at 1/5th the cost of the Shun. Out of the box it's quite sharp, however I honed it with a ceramic rod prior to first use, and it became a razor. Slices through tomatoes, potatoes, even frozen meats, like they're butter. It isn't a heavy knife but the weight alone still does most of the work. It's fairly comfortable in the hands as well. Only downside, in a way, is it's size; I would like to have a knife block for it but I'll end up having to make my own since few can hold a 10" knife.

I've worked as a short-order cook, so using such a large knife became both comfortable and a preference to me. This knife hasn't disappointed in any way. Takes a great edge, comfortable, well balanced and inexpensive, I absolutely love this knife (I also have the 8" slicer and two 4" paring, also just as good in every way). I have used Wustoff and Global knives before, and they just seem over-priced now. These aren't as attractive as the high-end brands, but they can be just as sharp, and as far as holding an edge these seem to hold up just as well, too. I have only owned for a couple weeks, but my knives see quite a bit of action.

Overall, I'd recommend Victorinox knives, absolutely. Like most knives though, I also recommend hand-washing, honing before each use, and don't use with glass cutting boards.

The 10 inch version of this knife is awkward to handle, and dangerous to use. The balance point is somewhere in the middle of the blade, rather than where one would normally grip a knife. Yes it's sharp, but so are the cheap hollow ground blades you find at low end retailers.

I have cooked professionally as well as doing home cooking, so I'm not a stranger to using a knife. I find this particular knife unusable, and I am returning it.
