This knife compares favorably to my much more expensive Japanese knives. It's super sharp, hold it's edge, and the handle provides excellent grip. It seems to slide through tougher, larger objects easier than any other knives. I believe this is due to the entirely polished blade surface. No other knives possess this feature. The blades are likely made from the same sheet steel as Victorinox pocket knives. This is definitely a good thing as the steel quality is excellent, and the large volumes Victorinox buys and processes keeps the prices on these knives super low. The Victorinox knives are proof that you can manufacture high quality products at reasonable prices (in this case very reasonable) without resorting to manufacturing in third world countries.

I bought this knife after reading a review of 8 inch Chef's Knives in Cook's Illustrated. They rated this knife above ALL others, including knives costing more than a hundred dollars. It arrives in extremely sharp condition. I've used some expensive Chef's knives, and even an expensive Henckels Santoku. None were as good as this knife.

Plastic handle or not, this is one of my absolute favorite knives. Yes, it is a recommendation by America's Test Kitchen / Cook's Illustrated, and that is what brought me to find this knife. But, it is the price, the feel, the sharpness and the overall workability of this knife that would bring back to it again and again. Honestly, I am surprised that a plastic handled knife would be impressive to me, but it does not feel cheap and, more importantly, it works great! The only thing I wish it had, which few knives offer, is a cover for it. I bought a few inexpensive knives with a knife cover and it is nice because I can travel with it and it keeps protected in my silverware drawer. I don't have a fancy knife holder or space on my walls or counter for such a thing so it would be nice to keep it protected. Obviously this is nothing I fault the company with, just a personal preference. I LOVE the value of this knife and I LOVE this knife overall.
Customer Review: Absolutely the best bargain for chef's knife around Summary: 5 Stars
This is the second one of these I have owned. Has all the characteristics you look for in a work-horse knife: weight, balance, handle design & angle, and most of all, holding an edge! Only drawback I have found is that if you get carried away around fowl, the lightweight blade can be bent at the edge. That's why I'm on my second one. Having said that, this is still the best cutlery bargain around-gets more use than my Wusthoffs!
