My wife had a generic channel knife that I tried but it doesn't cut deep enough for a long garnish to hold together. I looked at a plastic handled channel knife (whose name began with an M - but that is all I remember of it)at a local cutlery store and while it looked deep enough it wasn't sharp at all and didn't appear to be worth it's ten dollar price. The ones I saw at the kitchen store were also of maginal quality and did not cut deep enough.
This Victorinox is very sharp and makes a cut that is deep enough but not too deep. It looks great,feels great in the hand and should last forever. Even though it is expensive I recommend it highly. I also considered the WMF, which is the same pull style, but Amazon said it was one to two months for deleivery and nobody else had them either.
