THIS PAN IS ABSOLUTELY PERFECT FOR MAKING SCONES OR CORNBREAD. I HAVE TRIED MANY RECIPES AND THIS IS THE BEST ONE YET! Please feel free to use my recipe:
CINNAMON, PECAN, COCONUT, RAISIN SCONES:
1 3/4 CUPS ALL-PURPOSE FLOUR
1/2 CUP CHOPPED PECANS
3 PACKAGES OF SPLENDA
2 AND 1/4 TEASPOONS BAKING POWDER
1/2 TEASPOON SALT
1 AND 1/2 TEASPOON CINNAMON
1/4 CUP COLD UNSALTED BUTTER
2 EGGS
1/3 CUP MILK WITH 2 TABLESPOONS COCONUT CREAM POWDER OR USE LIQUID COCONUT CREAM 1/3 CUP
1/2 CUP RAISINS
IN A BOWL COMBINE THE FLOUR, SPLENDA, BAKING POWDER, SALT, CINNAMON, AND CUT IN THE BUTTER VERY FINE.
ADD THE NUTS, AND RAISINS, AND COCONUT - MIX WELL.
BEAT THE EGGS WITH A FORK AND MIX WELL INTO THE COCONUT CREAM MIXTURE- ADD TO THE FLOUR MIXTURE. MIX WELL. PREPARE THE SCONE PAN BY SPRAYING IT WITH PAM. PRESS THE DOUGH INTO THE SCONE PAN (PERFECT SIZE FOR THIS RECIPE). BRUSH TOPS WITH BEATEN EGG OR JUST MILK. MIX SOME CINNAMON WITH SPLENDA AND SPRINKLE ON TOP OF EACH SCONE. BAKE AT 450 DEGREE FOR 14 MINUTES OR UNTIL BROWN. COOL ON RACKS. IF DESIRED, YOU CAN MAKE A CONF. SUGAR ICING AND DRIP ON EACH SCONE.
NOTE: MANY RECIPES SAY TO PLACE THE DOUGH ON A FLOURED SURFACE AND MIX WELL. IF YOU OVERMIX, YOUR SCONE WILL BE TOUGH. BY PRESSING THE DOUGH DIRECTLY INTO A PAN MAKES A VERY TENDER SCONE INSIDE AND CRISP ON THE OUTSIDE.
