The Messermeister San Moritz Elite 8-inch Chef's Knife, also known as a Cook's Knife or French Knife, is the most versatile knife in the kitchen and thus the most used blade style by professional chefs. The blade is shaped so that it can peel, trim, slice, dice, chop, mince, vegetables, fillet fish, and cut meat. Each part of the knife is designed to perform a different task. It is the flagship of cutlery.
This chef's knife has a broad blade (at 2 inches, it's a bit wider than many manufacturers' blades) and a curved edge for rocking through a chopping task. The 8-inch blade suits most cooks. The knife is from Messermeister's first-rate San Moritz line. Forged from a single piece of high-carbon stainless steel, the blade has a shortened bolster, so it's sharp from tip to heel and a cook's forefinger rests comfortably on the blade. Molded from a polymer that won't crack or warp, the handle is tough and contains a nearly full tang. The plate on the handle's end for engraving initials bespeaks this German manufacturer's reputation as a supplier to professional chefs.
