These shears are great. The blades are durable, sharp, and curved very nicely for a huge range of cutting tasks. They are mainly for use in the kitchen, but that doesn't mean that they aren't useful elsewhere. They have several extra tools built in and can be taken apart extremely easily for thorough sanitizing, or to use as an individual blade (almost as you would a knife).
In my title, the "almost" part is that after using these for about a year the handle cracked. Specifically the longer of the two plastic eye rings of the handle cracked and separated from itself right where the metal goes into the inner side. When I would open the shears the cracked part would also open. Because I use these a lot for raw meat and other bacteria-susceptible foods, the crack quite literally opened the handle up to cross contamination. Before this could happen I repaired the crack with gorilla glue and I haven't seen any sign of the rack reopening yet. I've been looking around passively for shears who's metal handles continue the whole way through the plastic eye rings. Until I find them at the right price, these shears are my best pair.

This is the best tool for dismantling a whole chicken. Safer than a knife, and you can take it apart (easily!) and put it in the dishwasher to disinfect. And then reassemble it easily (in 1 second!). I use it also for trimming fat off of pork, lamb, beef, etc., and it's invaluable for removing extra fins, etc., from fish.

I never used to use my old kitchen scissors - would always make do with a knife - even when they were lying right there in the drawer. But these scissors are used constantly - from cutting up a chicken to cutting open a chip bag. They are simply awesome - and so easy to clean. Buy them!!

After reading the Cooks Illustrated review on these went to Amazon. CI rated them tops and they're usually right. These things are great! I've owned several different poultry shears and they never worked. I always went back to using a knife. These aren't marketed as poultry shears, but they do the job very well. Something about the leverage they provide just works. One other thing: You know how you have those lids that have loose handles? You always mean to fix it but don't want to get a screwdriver right in the middle of prepping a meal? This has a little screwdriver that is just the right size. I know, kind of minor, but I use it all the time and find it a great addition. Anyway, I love these things and highly recommend them. I am a gadget type of guy. This is one that's worth it if you're willing to pay.

This is the one recommended recently on TV's America's Test Kitchen, and they're the best I've ever had. They come apart for easy cleaning, and are very ergonomically-friendly when you're cutting up whole chicken etc. Thr built-in extras - bottle opener, screw-driver etc - are nice add-ons, but the real value is in the performance of the scissors for tough kitchen work. A+
