Description of Mercer Cutlery Genesis 7-Inch Santoku Knife

An Eastern-style chef's knife, the Genesis 7-inch santoku slices with power and minces with precision. Rectangular in shape, it features a series of ground shallows called a Granton edge to create tiny air pockets, allowing thin slices to release easily from the blade. A complement to the Genesis chef's and carving knives, the piece is made in Taiwan using European components and technology.
