Customer Review: One of my all-time favorite knives, but...

This is a truly remarkable knife for sharpness, handling and ease.
The handle is extremely comfortable, the length and width of the blade is exactly what I like in a parer, and the sharpness makes your task about as effortless as cutting through warm butter.
It pares through ripe tomatoes without so much as a pause, peels effortlessly (be careful not to slip!) and glides through firmer vegetables like carrots. You could call it dangerously sharp, but to me, a very experienced cook, I think most knives people own are dangerously dull. I prefer the former. This knife makes time in the kitchen enjoyable, and for me, that's what it's all about.
One of the things I really like about this knife is that with ceramic, you can cut things like lettuces and the lettuce does not immediately rust as it does using steel knives. It's also fun to choose the color(s) you want, because it does come in a variety of them.
One of the things I like least about this knife is storage - you do not store this one in a drawer, where it is likely to get broken or cut you as you reach for it. You store it in a cutting block. I recommend the Koosh cutting block since it accommodate many knives of all sizes and doesn't have set slot sizes. You also have to be careful with it since it is ceramic ... it will break if you use too much pressure. And, as with any good knife, don't use it as a screwdriver or a wedge - you will most certainly break it.
I would have given this knife five stars if:
1) I could sharpen it myself at home; or
2) I could cut truly hard things (like beets) with it; or
3) I didn't have to baby it when not in use.
