When the smell of freshly baked bread permeates the air, you can't wait to slice that first piece. The knife you need usually comes with a serrated or scalloped edge. A serrated knive stays sharper longer because the cutting edge between the points does not come in contact with the cutting board. This is the ideal knife for cutting bread or any other food of soft substance with a tough skin or crust.The 8-inch blade on this knife features a curved back and a straight, scalloped edge. The serrated edge penetrates resistant crusts, slicing evenly through even hard loaves of bread without crushing the delicate interior. The knife is also well suited for slicing tough, fibrous fruits, such as pineapples. Serrated-edge blades cannot easily be resharpened, but because the primary cutting surfaces are in the curved part of the scalloped edges, they tend to hold their cutting abilities quite well. Most of the Henckels lines--including the popular Four Star series--feature blades made of Friodur, a special, ice-hardened, no-stain steel created and patented by the company in 1939. This special formula was designed for exceptional hardness and high resistance to corrosion.
