Silpat is fantastic. Makes cleaning baking pans a breeze. Cookies come out chewy and slightly crispy. Fantastic for rolling out doughs, I use mine to roll out cookie and bread dough all the time. Made Peppermint Bark with it this Christmas, the silpat was perfect for letting the chocolate temper. It came out beautifully, and was very simple to cleanup. Just a note, silpat should not be put in the dishwasher. Wash it by hand with a sponge, it def needs to be cleaned with some soap, it's not just rinse and use.
Overall one of the best baking products that I own.
