Easy job , no mess, 24 hours later and its done.
The best part is that its natural...no BS or whatever...plain natural wholeness!
The best way to get it right is first you have to make a batch of 8 jars of natural yogurt on the Donvier electronic Yogurt maker, then you can make out of that batch 2 cup of natural cream cheese.
Look... it takes the same effort to go to the supermarket and buy the yogurt than to make it yourself. It just takes patience.

Why make Yogurt Cheese? For me, it's because I am lactose intolerant and I needed a way to keep calcium in my diet. When you make yogurt cheese, the whey (which drains out) contains a majority of the lactose. You can substitute Yogurt Cheese into a number of recipes.
I am aware that you can make the cheese using a sieve and cheesecloth, but why when such an awesome tool is available! I appreciate the fact that it is sanitary (sealed lid), compact (approx 5x5x5), so it fits into my fridge well and that it's easy to use, even for a novice like me! The sealed lid is especially helpful, because I find that yogurt has a tendency to pick up "odors" easily. I also like the sealed lid, because when I'm in a hurry, I can use the same container to hold the cheese until I'm ready to use it.
So far my favorite "use" for the cheese is simple. After making my own yogurt with 1% milk, I put the yogurt into the cheese maker. I then use the yogurt cheese on my morning bagel. Because the yogurt I make is "milder" than the ones in the store, this makes a very nice cream cheese substitute, and yet is very low calorie.
***Later Note - You do need to be sure to wash the mesh fairly soon after making the cheese - if not, the milk dries in the mesh and has to be soaked for a long time to get it out.

I've had this item over a year and it's worked very well for me. It does exactly what it purports to do, and cleans up much more easily than I expected. It's solidly made and will give you a wonderful way to make yoghurt cheese. Mucking about with cheesecloth isn't worth the hassle when you have a tool like this.
