Spoons and ladles glide smoothly along the curved sides and rounded bottom. The lower profile of the pan allows for quick and even sauce reduction. The Saucier heats quickly and evenly at lower heat settings, delivering superior cooking control that eliminates hot spots. The 7-ply construction (18/10 stainless steel interior, 2 layers of aluminum, pure copper center, 2 layers of aluminum, magnetic stainless steel exterior) conducts heat evenly for superior cooking control. The riveted cast stainless steel handle is ergonomically designed for comfort and strength with a channel for easy gripping. The pan's domed cover helps seal in moisture, is marked for easy size identification and can also be used on the CIA 8" Saute Pan. The Culinary Institute of America Masters Collection of cookware, cutlery, bakeware, and culinary tools was designed with hands-on involvement and testing by the school's faculty of Certified Master Chefs.
